Sushi Rice



In some traditional Japanese cookbooks, the recipe for sushi or vinegared rice calls for a helper to stand by and fan the rice as the vinegar is added, in order to cool the rice to room temperature as soon as possible.

This sushi rice is used in the spicy crab rolls recipe.

Ingredients

  • 1 1/2 cups premium medium-grain Japanese rice
  • 2 cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt

Instructions

1. In a medium saucepan, cook the rice with the water according to package directions. Remove from heat, cover, and set aside for 15 minutes.

2. In a small bowl, make a dressing by whisking the vinegar with the sugar and salt.

3. Transfer the rice to a wood, glass, or ceramic bowl. Gradually pour in the dressing and stir to coat evenly.
