Samoosas



A wonderful Indian lady friend of mine from South Africa, named Audrey Peters, prepares the most delicious curried ground lamb samoosas you’ve ever tasted. Samoosas are a light pastry filled with meats or vegetables and served with a room-temperature chili sauce. Amongst friends, double dipping is allowed. Her recipe is below, but even better, she’ll FedEx them to you along with the chili sauce. Her number is (410) 945-2945.

Ingredients

  • 3 cups flour
  • 1/4 tsp salt
  • 1 cup cold water
  • 1/2 cup vegetable oil
  • 1 cup flour for sprinkling

Instructions

1. Preheat oven to 250 F.

2. Mix flour, salt, and water to make a stiff dough.

3. Divide dough into 12 portions and roll each between the palms of your hands to form balls.

4. Use 6 portions and roll out each portion into 4 inch disks.

5. Stack 6 discs on top of each other and spread oil and sprinkle flour between the disks. Do not cover the bottom of the first disc and the top of the last disc.

6. Roll out the stacked discs into a large 12-inch disk.

7. Place on a round baking tray and bake for 15 minutes or until the first layer starts to puff-up.

8. Remove from oven and peel each disc as soon as possible, while still hot.

9. Fold in half and place between a damp dishcloth until ready to cut into strips.

10. Repeat for remaining six portions.

11. Trim off sides and cut into 3 equal strips.

(Optional - Fry or bake and cut the off ends and use as chips for a dip)
