Salad of Baby Greens



with Toasted Goat Cheese Croutons

Ingredients

  • 8 1/2-inch thick slices goat cheese
  • 1/4 cup olive oil
  • 1/2 teaspoon herbes de Provence
  • 6 baguette slices, lightly toasted
  • 10 ounces mixed baby salad greens
  • Tomato juice dressing

Instructions

1. Arrange the cheese slices in a single layer in a shallow dish. Drizzle with the olive oil, then sprinkle with the herbs. Cover and let stand for 1 to 2 hours.

2. Preheat the broiler.

3. Arrange the baguette slices on a broiler pan or heat proof tray. Top each slice with a piece of cheese. Set aside.

4. In a large bowl, toss the greens with the tomato juice dressing. Pile the salad onto 8 individual salad plates.

5. Place the pan of cheese-topped baguette slices under the broiler until the cheese is bubbly and beginning to brown. Place one hot cheese toast on top of each salad and serve immediately.
