Russian Salad



Ingredients

  • 3 large potatoes, peeled, cubed, and cooked
  • 2 carrots, peeled, cubed, and cooked
  • 1/2 cup peas, cooked
  • 1/2 cup 1/4-inch green bean pieces, cooked
  • 1/2 cup finely diced celery
  • 3/4 cup mayonnaise
  • 1/4 cup truffle oil or walnut oil
  • 2 tablespoons lemon juice
  • 1/2 teaspoon salt
  • Freshly ground pepper

Instructions

1. In a mixing bowl, combine the potatoes, carrots, peas, beans, and celery and toss well.

2. In a small bowl, whisk together the mayonnaise, oil, lemon juice, salt and pepper to taste. Pour the dressing on the vegetables to coat lightly. Gently toss to combine.
