Red Cabbage Coleslaw



Yield: Serves 8

Ingredients

  • Juice of 1 1/2 lemons
  • 1 tablespoon Dijon mustard
  • 1 teaspoon honey
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 red cabbage, finely shredded
  • 5 teaspoons chopped fresh thyme leaves

Instructions

1. In a small bowl, whisk together the lemon juice, mustard, and honey. Whisk in the olive oil and season with salt and pepper to taste.

2. In a large bowl, combine the cabbage and thyme. Pour on the dressing and toss well to combine.
