1 stick (1/2 cup) unsalted butter, thinly sliced and frozen
1 egg, beaten
Instructions
1. Place the flour, salt, and butter in the bowl of a food processor fitted with the metal blade. Pulse until well combined, 4 to 6 times. Switch the processor to continuous operation and add 6 tablespoons of water until the dough forms a ball. Remove the dough ball from the food processor, flatten into a disk, wrap it in plastic, and refrigerate for at least 1 hour.
2. Preheat the oven to 350 F.
3. Roll out the dough on a lightly floured board to a thickness of 1/4 inch. Line the bottom of 10-inch springform pan with the dough, trimming the edges so they don't overlap the sides of the pan. Brush the inside of the dough with the beaten egg, pierce it all over a fork, and line it with foil. Fill the pan with uncooked beans to weight the crust and bake for 20 minutes. Set the crust aside to cool, then proceed with step 3 of the recipe above.
