Pappadams



Pappadams (also spelled poppadum or pappadom) are wafer­-­thin crispy savory breads made from lentil flour and various spices—the Indian equivalent to a Mexican tortilla. They provide the ideal accompaniment to the hearty curry and its refreshing side dishes. You can purchase pappadams prepared but uncooked at Indian markets, gourmet delis, and many supermarkets; cook according to the instructions on the package. This usually means deep-frying in hot oil for 2 seconds on each side, then draining on paper towels. (Be sure a pappadam is fully submerged in 1/2 to 3/4 inches of oil for frying.) Pappadams can be cooked in advance, but they must be stored in an airtight container, as humidity will render them soggy. You can serve them before the meal with drinks or during the appetizer ­course.
