1/4 pound plus 4 tablespoons unsalted butter (1 1/2 sticks)
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups rolled oats
1 1/2 cups raisins
1/4 cup chopped crystallized ginger
Instructions
1. Grease 4 baking sheets.
2. Preheat the oven to 375 F.
3. Sift the flours with the baking soda, salt, and cinnamon and set aside.
4. In a large bowl, cream the butter and sugars until light. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.
5. Using a wooden spoon, stir in the oats, raisins, and ginger.
6. Drop the dough by tablespoonfuls onto the prepared baking sheets. Using a moistened spatula, press the mounds of dough to flatten them slightly.
7. Cook for 15 to 20 minutes, until evenly brown.
8. Remove from the oven and loosen with the metal spatula. Allow to cool on the baking sheet for 5 minutes, then transfer to a wire cooling rack for 30 minutes.
