1. Combine the flour, salt, eggs, and oil in a food processor. Process until the dough forms a ball, adding more water, a teaspoon at a time, if dough is too dry.
2. Run the dough through a pasta machine according to the manufacturer’s directions for lasagna noodles. Cut the rolled dough into lengths about 15 inches long. Drape the noodles on a pasta rack and allow to dry at least 10 minutes, or until ready to cook.
3. When ready to use the noodles, cook them, a few at time, in a large pot of boiling water for 1 minute or until they float to the top of the water. Carefully remove the noodles from the pan and plunge into cold water. Remove and place on kitchen towels to drain.
