Gertie's Famous Chicken


Yield: Serves 4

Ingredients

  • 1/2 cup olive oil
  • 2 1/2 teaspoons Herbs de Provence
  • 1 teaspoon Jane’s Crazy Mixed Up Salt
  • 2 1/2 teaspoons Chef Paul Prudhomme’s Magic Seasoning Blends (Poultry Magic)
  • 2 tablespoons Mrs. Dash original blend
  • 1 whole chicken, cleaned, excess fat removed, and cut down the back with the backbone removed
  • 1 cup chicken stock
  • 1 teaspoon arrowroot
  • 1 tablespoon water

Instructions

1. In small bowl, add olive oil and spices and mix. Take mixture and rub thoroughly over entire chicken and let sit for at least 2 hours, covered.

2. Pre-heat the oven to 350 F.

3. Place chicken in a roasting pan and pour chicken stock over it. Cover the chicken and place in the middle rack of the oven. Cook at 350 F for 1 hour. Baste constantly (every 5 minutes).

4. Remove chicken from the oven and uncover. Turn the oven to 475 F and continue cooking for 10–15 minutes, basting often. Increase heat to 500 F and broil for 10 more minutes until chicken browns and skin is crisp.

5. Remove chicken from the pan and pour juice from the bottom of the roasting pan into a saucepan. Skim any excess fat. In a separate small bowl, mix the arrowroot and water, and then add to saucepan. Let simmer about 5 minutes, stirring constantly, and serve along with chicken.
