Chopped Vegetable Salad



in a Balsamic Vinaigrette

Ingredients

  • 1 1/2 heads romaine lettuce
  • 6 roma tomatoes, seeded and cubed
  • 2 cooked artichoke bottoms, cut into cubes
  • 1 cup canned garbanzo beans, rinsed and drained
  • 4 ounces mozzarella cheese, cubed
  • 2 celery stalks, cut into cubes
  • 1/2 cucumber, peeled, seeded and diced
  • 1/2 white onion, diced
  • Balsamic vinaigrette

Instructions

Rinse and dry the lettuce, discarding outer leaves. Roughly chop the lettuce and place in a salad bowl with the tomatoes, artichoke bottoms, beans, cheese, celery, cucumber, and onion. Pour on the vinaigrette and toss lightly.
