Chicken and Fennel Sausage



Yield: 4 Servings

Ingredients

  • 1 pound ground chicken
  • 1/4 cup chopped onion
  • 1 cup peeled, cored and chopped Granny Smith apple
  • 1 cup finely chopped fennel bulb
  • 1 egg yolk, beaten
  • 1 teaspoon dried chili flakes
  • 3 tablespoons chopped fresh parsley
  • Salt and freshly ground pepper
  • 2 tablespoons vegetable oil
  • 2 tablespoons butter

Instructions

1. In a mixing bowl, combine all the ingredients except the oil and butter. Mix thoroughly with a fork. Form the mixture into 3-inch patties by hand.

2. Heat the oil and butter together in a pan over medium heat. Fry until golden on both sides and drain on paper towels.
