5 firm and ripe bananas, peeled and cut into 1/4-inch slices
Instructions
1. Blanch orange and lime zest in boiling water for 1 minute. Remove, dry with paper towels, and set aside.
2. In a heavy-bottom saucepan, heat sugar, orange juice, and lime juice over medium heat. When sugar has caramelized and is light golden brown in color, pour over the bananas.
3. Add the julienned zest and let marinate for at least 3 hours before serving.
Note: This dish can be prepared up to 1 day in advance.
For garnish you will need the following:
1 1/2 cups raspberries
3 bunches champagne grapes
4 apples thinly sliced
