Tomato and Onion Raita



Ingredients

  • 3 large ripe tomatoes, seeded and ­cubed
  • 1/2 medium white onion, finely ­chopped
  • 2 tablespoons chopped ­cilantro
  • 1/2 green chili, seeded and ­chopped
  • 1/3 cup red wine vinegar (or brown English cider ­vinegar)
  • 2 tablespoons olive ­oil
  • 1 tablespoon ­sugar
  • Salt and freshly ground black pepper, to ­taste

Instructions

1. Place the tomatoes, onion, cilantro, and chili in a bowl, and mix ­well.

2. Prepare the vinaigrette: In a medium bowl, whisk together the vinegar, oil, sugar, and salt and pepper to taste. Pour the vinaigrette over the tomato mixture along with 2 tablespoons of water, refrigerate for up to 2 hours, and serve. This raita can be stored in a covered glass or ceramic container in the refrigerator for up to 24 ­hours.
