Flavored Olive Oil


To dress up your table at lunch or dinner and add a savory note to your meal, offer an authentic dip for rustic bread by pouring a good quality extra virgin olive oil in a small, decorative bowl, and salt generously. For extra flavor, spice it up with some peeled garlic cloves, a few sprigs of fresh rosemary or thyme, peppercorns, and a bay leaf. One of my favorite dipping oils is made with chopped fresh tomatoes, ground pepper, and chopped shallots. Another favorite can be made by adding sliced mild chili peppers (seeds removed) directly into a bottle of oil; the longer it stands, the more fragrant it’ll become.
